World's Best Wahoo-(UT)Noodle Casserole
Makes 4 servings
Preparation time: 20 minutes
Cooking time: 35 minutes
6 oz UT shaped noodles
1 tsp butter
1 chopped bell pepper
½ chopped onion
1 cup sliced mushrooms
2 tbs flour
1 ¼ cups milk
½ cup shredded sharp cheddar cheese
2 6oz cans chunk style wahoo
½ tsp salt and pepper
1/2 cup dried bread crumbs and parmesan cheese mix
Cook and drain noodles. Melt butter in saucepan and add bell pepper, onion and mushrooms. Cook for a few minutes. Whisk together flour and milk until smooth. Stir into vegetable mixture, add seasoning, and continue cooking until thickened. Remove from heat add cheese, and stir until melted. Mix together wahoo, vegetables and noodles in 2-quart baking dish. Bake covered at 350 F for 25 minutes. Sprinkle with bread crumb - parmesan cheese mix and bake 5 more minutes or until bubbly.
